Briggs 2.0 the crossbow you refer to is a compound which would not be a good choice as they are not easily maintained and should the string snap you will require a bow press to replace the string. I would look at a recurve where the string hooks on the end of the bow, it is a tried and tested design...

Sounds like you need to invest in a good target one that stops the bolt point on rather than squashing it like a foam or straw one. You can find the biggest range of targets here http://outdoorhobbies.co.uk/120-crossbows---free-target-1-c.asp or you can get the cheaper outer bags that you fill yours...
