Another favourite in our house. Very much better if you can age it!
You will need:
1lb rhubarb
Peel a lemon and discard peel and pips
One chopped onion and 3 chopped cloves garlic
1/2 lb sultanas,1lb sugar(brown or white)3tsp salt,1 1/2 tsp ground ginger,1/4 tsp cayenne and 1/2 pint malt vinegar.
Shove it all in a pan, simmer and stir constantly until the mixture goes thick. Then put into hot sterilised jars. Put on lids and store for as long as possible.
This chutney goes well with poppadoms!

I'm not a fan of rhubarb but nevertheless have put some effort into revivifying the crowns on the allotment as it is useful to have when little else is around. This looks like a great way to use it.

Thanks for this Jansman. I had a recipe for rhubarb chutney but lost it when my laptop died.
I'm being nagged to do something about the rhubarb that has invaded the garden once again; this should sort it.

Now saved to my file in the hope that the rhubarb performs well next year. We are not big pudding fans here so alternative recipes are always useful.
