I've just had a look at HFW's Meat book, it has a lovely enthusiastic essay on preserving meat but refers to many recipes to be found in the River Cottage Cook Book, so that might be a better place to start if you are interested in preserving meat.
I am not a charcutier, but have made bacon and ham, and the recipes he includes in Meat are easy and workable, I'd say. Making bacon is easy, and it costs very little to get started - a couple of kg of pork belly and some salt....

I made some Bacon, it was a great success. It's not something I do often, just another skill I've learned. I keep meaning to try a wet cure.
