Recipe for two: take two or three large onions,peel and halve.Slice into ' ribbons' DON'T chop.Chuck them into a frying pan with a good sized knob of butter or margarine and a right old glugof olive oil- or vegetable oil if you have no olive oil.The idea is to make it oily.
Sweat the onions down,and throw in some chopped garlic.Meanwhile,boil up some pasta.We use fusilli,but whatever you prefer. Chop or grate some cheese.We use cheddar,but have used mozzarella and red Leicester. Your shout.
When the onions are soft,the pasta cooked and drained,combine the two,and add the cheese.Get a right good grind of black pepper in there too.Serve with salad and crusty bread.Enjoy.
