Air and light are your enemy when storing dehydrated food, so that said, much as I like the idea of repurposing beer kits and pringle tins, they wont' be airtight. You could vac pack and then store in the beer tins. or use any airtight jar/plastic container.

Going on today mate, did pineapple last week and was away up a bothy at the weekend so I'll let you know how it went in a day or two. Onions dry better if you very quickly blanch them first, at least they do in my dehydrator, and it tones the smell down too, everything else I have found bearable, I just run it in my kitchen.
