Seitan Zinger Burger and Fries

OK.

A big meal from stash ingredients. NO FRESH MEAT OR VEG except 2 potatoes and a tub of cheap yoghurt. *

This was a mix of two recipes inspired by SORTED Youtube Channel

I'd already made some seitan out of GlutenWheat and chickpeas: Two staples from my long term stash.

My batch of 8 seitan 'chicken fillets' was based more closely on
this site. I substituted in chicken stock.
It's very similar to the Sorted Recipe, if you prefer to stay in one place.

The 8 portions of seitan had been kept aside ( Cost about £1.50 for the lot. )

Today, I made up a dip and some flavoured flour as per the SORTED video. (No aleppo pepper and I used some cheap yoghurt)

And so it was I battered the seitan and made some french fries. The fries were cut to 5mm and soaked in one made up OXO before frying. I re-used the oil from the patties so it is a bit bitty. I later drank the oxo water, so as to not waste it.

I did not bother with sauces or buns or veg.

I'd used my own dehydrated onion and garlic and some herbs from my stash. * Forgive me for adding potatoes and yoghurt.

Total ingredients
Seitan : This is JUST LIKE CHICKEN MINCE NUGGET MEAT

300g cooked chickpeas
300g Vital Wheat Gluten ( holland and barratt )
1 strongly made up chicken Oxo. ( I'm no vegan )
2 Tbsp Olive Oil
2 Tbsp Soy Sauce
2 Tbsp Lemon Juice
1 Tsp dehydrated Garlic
1 Tbsp nutritional yeast
1/2 tsp salt
1/4 tsp dried thyme
1/4 tsp dried rosemary
1/4 tsp dried ground sage
1/4 tsp dried oregano
Seiten Recipe. Prepare ahead. Makes 8 portions

Flour Dip, as per the 'SORTED' recipe. Quantities are a bit vague.
2 cups of flour..
2 Tbsp nutritional yeast flakes.
some :) pepper
1 tsp salt
1/2 tsp paprika
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp cumin powder
1/2 tsp mustard powder

Batter dip
Small tub of natural yoghurt.... Or maybe some eggs and flour and water
1 Tbsp lemon Juice
1 Tbsp sriracha chilli sauce
I had no miso.

French fries MacDonalds style
2 potatoes chipped to 5mm
Soak in one beef oxo made up to half a pint
Fried in the same oil after the 'burgers'

Results and observations

The recipe has LOTS of ingredients, but there are no rules. Made in stages, it was very easy.

The seitan was very convincing. Compared to an economy cheaper chicken nugget made from minced chicken. You would barely tell them apart.

The 'zinger' batter was a bit light on chilli and pepper hotness, deliberately so. Ramp it up if you dare with more sriracha and salt and pepper.

By double dipping in the flour and yoghurt, I got a nice thick crispy batter just like KFC batter.

Because these were both boiled and fried, they had just the right greasiness and moisture. Frying served well to disguise the seitan.

First time I'd tried the gravy soaked french fries. Made for tasty fries, but mine came out a bit soggy. I think I over filled the pan.

As a fake chicken meat, I cannot rave enough about this seitan chickpea mix.
