Well I bought some powdered egg from Ebay. I Went for one that was actually for human consumption as I didn't fancy the ones sold as fish food.
The smell from a kilo of powdered egg was a bit off-putting. However, I persevered and made a small, simple cheese omelette. I am pleased to report that I was very pleasantly surprised! I was actually very nice. Even my wife thought it was very good.
I'm going to try vac-packing it in 100gram bags.

Don't forget to put a tuft of tissue in the suck hole (or some similar mechanism) of the vacuum sealer to stop the egg dust being inhaled by the machine. It is difficult to clean out and goes sticky.

Any idea how long this will keep for? I've vac packed it into 100gr bags, then vac packed 5 of those into two bigger bags.

It is worth doing that when vaccing any fine powders.
My packs of 'Supercook' dried whole egg in their original cardboard tubs are BBE Oct 08 and are still fine to cook and eat. I really must rotate them sometime.
