Made some rosehip syrup about a month back and it is actually surprisingly nice ! Got 4 honey jars worth of syrup from..hmm..maybe 1lb. of rosehips. Its the skin that makes the syrup, not the seeds, which you need to strain out (theres lots of little hairs so you need muslin cloth, not just a seive ;) )

I thought you should wait for frosts?

Eureka! Okay, this sentence finally clicked for me! Skin good, seeds good-ish, little hairs are the reason people strain it ... that must be the "itchybum" stuff from the first page :lol:

I think the frost thing is for sloes Matt. :)
