Solid choice. Some dried items will tend to pierce vac bags so might need double bagging or padding. Certainly double seal.
If you go down the route of vac mason jarring, I just found Home Bargain to be super cheap for them. Vac adapter from amazon.com US site. It is possible to vac seal jars by putting them into a piece of vac bag and not sealing it.
Remember that dehydrating alone will extend shelf life a lot, on its own, and vac packing is is the icing on the cake.
I'm only just starting to vac seal mason jars.

I have been looking to vacuum seal jars and have been after a "FoodSaver Vacuum Sealer FCARWJAH 000 Wide Mouth Jar Kit with Regular Sealer and Accessory Hose".
They are out of stock on Amazon and other sites or are looking at over a month for delivery so I'll leave things for a while. I've seen one or two good videos about the jar kit and they mentioned that they were difficult to get in the USA (videos done before last Xmas).

There's an ebay uk seller that is dropshipping/arbitraging them from US amazon. But that way you get stung on import charges. You should be able to get it direct from amazon US seller without some of those charges.

The dehydrator that i purchased looks well made and is easy enough to use. The cook book that came with it wasn't much good. It gave different times for dehydrating the same food on different pages (lemon from five to fifteen hours) and a very short shelf life for the deydrated food - usually a week or month.
