On Tuesday,a customer asked if I could get an ox tongue for her. It came in yesterday,and I spiked it,ready for her to brine it ( she knows the way,and it’s for Christmas) . My younger colleagues were,well, almost sick! They only deal - themselves- with boxed stuff. The proper stuff goes mostly to the old boy. That’ll be me then. :lol: :lol:
LOl yup the old stuff is the best , i love brawn but the old stuff the stuff today hmmm flavourless coems to mind , i use to love mum would take me shopping on a friday and after we been in budgens she use to go to the butcher omg use to get 1/4 of brawn for a treat .

I wonder what is going to happen the old ways are dying out , but i will say ox tail and other as they use to call them strange cuts have now gone mad in price due to immigrants they love all those cuts and have pushed the prices sky hi , i use to go in the butchers and get a huge bag of oxtail and make stews and now well you can't afford it , like lamb breast , hugh the moron whittingstall well got people buying stuff that we use to be able to get cheap now the posh want it the price goes mad .
