Corned beef hash. Tin of corned beef. Mashed potatoes. Season to taste. Grated cheese on top if preferred.

spaghetti in a creamy sauce
Cook pasta in a pan of boiling water until tender, drain.
In th hot pan add a desertspoon of butter, 2 crushed garlic cloves, a liberal amount of black pepper and a carton of double cream, and a inch of parmesan cheese that has been finely grated, stir. Add the drained spaghetti, toss. then serve
Perhaps not the cheapest meal, but it is quick and easy.
I buy blocks of parmesan cheese from Lidils at £3:50 and it usually lasts 5 weeks and I cook with it twice a week

Fridge Casserole.
Whatever veg is lurking in the fridge
Stock cube
Handful of any dried bean you have/like Soaked for a few hours, then cooked as per instructions.
Throw all ingredients together cover with water, cook in oven for a couple hours until everything is cooked. Serve with either dumplings, bread or mash.
Monday Pie.
Everything left over from sunday dinner chopped.
Stock cube
Enough mash to cover.
Mix all the leftover cooked veg and meat, cover with gravy, top with mash. Bake until golden brown and bubbling.
Mum made this every monday, she saved all the veg, meat, yorkshire pud, stuffing and chopped the lot up. She went through the war and rarely wasted anything. Making something out of nothing was her speciality!
Another family favourite, though not to everyone's taste.
Black Pudding, mash and tinned tomatoes..... nom, nom, nom. Cheaper than 2 portions of chips!

They are really good! Just don't sound it. No.1 son named it, what can I say.
The last fridge casserole I made was carrot, celery, summer squash, onion, dehydrated peppers and mushrooms from the store cupboard and cannelini beans. Topped with dumplings which went yummy crispy on the top. It can be whatever you have, no hard and fast rules. Does that sound better?

Main prob in this house is that we don't seem to have leftovers !
But yes, I do this already with the veg, I throw anything & everything into soup. We will all need to learn wartime cooking at some point I think !

Indeed Lil, I just wish I'd paid more attention to Mum when she cooked. Her food was fantastic.

We have a war time recipe book my great aunt used as a bible i will search it out. and post a few of the good ones..
