Dehydrated banana is great, make sure it's fully dried (like a thick crisp). Most other fruits will dry to a slightly leathery texture, but your 'nanas should be fully dried and they'll keep for ages. Got some in a air-tight box from about 6 months ago and they are still crisp ! Good luck !
