Proper lean extra dry biltong, yum. I like it so dry it snaps or crumbles in your hand, same for droevorse. Agree with the Hunter's bilton recommendation - seem to be one of the best. When we lived in South Africa, my dad used to make it at home and dry it on hooks in the garage ...and pretend he didn't notice us sneaking in to snatch the occasional strip. Visualise a 9 yr old and an 11 yr old trying to blance one on the other's shoulders cos Dad had hidden the step ladder....but we manged!
I actually preferred the beef jerky I tried from a place in Lymington that probably no longer exists - the beef jerky was in wider, flatter strips and had much more pepper in the seasoning. Ok, salivating now.

Just made my first few lots of home-made beef jerky. First lot was simply frying steak cut into strips and dehydrated plain, turned out nicely with a decent flavour and texture. Second lot I marinated overnight in a mix of Lea+Perrins, Balsamic vinegar and a chilli+garlic herb rub - this has turned out fantastic ! Don't think it'll last long cos I'll eat it all
All run through my 5-tray Severin dehydrator for hmm about 5 hours I think, I just kept an eye on it and turned it off when it was still flexible and slightly chewy.
