As the density (weight or mass per volume of liquid) of the liquid goes down with the increased alcohol by volume they float lower in the liquid giving a reading on the scale.
I make an estimate of the alcohol content of the fermented "mash" or "wash" using a beer and wine hydrometer.
The starting specific gravity (density of liquid before fermentation) gives you an estimate of how much alcohol is potentially create-able, and then end specific gravity (density of liquid after fermentation) in relation to the starting specific gravity tells you how much is actually made.
Once the distillation is complete, I use an alcohol spirit hydrometer designed to measure percentage of alcohol in distillate and it gives a reading in terms of percentage.
The burners are tins, just tins, but designed for use in bioethanol fireplaces.
