You'd need a desalinination plant for a sub so the same difference, you cant grow stuff on a sub either. People lived on many of the islands as crofters years ago, better bet than sitting on the sea bed hoping your home made sub will surface.
You don't 'need' a desalination plant on a boat, you can have big ol' water tanks like the old 'O' boats, everything we've built since has a couple of big kettles though.
Totally irrelevant though, the notion that you can 'MacGyver' up a submarine is fantastical at the best of times never mind when things have already gone Pete Tong.

I'd still prefer the secret volcano lair, I've tried the submarines, a bit compact and bijou.

You could have "big ol water tanks" on an island to, but they'll run out sooner or later, as will the ones on your boat. And unless your partial to sea water you need a way of getting fresh, on an island you could collect rain water, you can't really on a sub or small boat because it's contaminated by spray most of the time.
