Well worth learning a few techniques in case using a freezer / fridge isn't an option.
On a similar subject I tried makin some Jerky once using the Airing Cupboard as a dryer....MrsCC was less than impressed when she found it and the experiment was abruptly cancelled

I've got a simple method I use to smoke meat at work also works with fish,
All you need is a deep tray or pan with a fitting lid,
Tin foil
Open fire or stove top
A small rack to fit inside the tray
Equal amounts of sugar, rice and either wood chips or a teabag,
All you do is double the foil up and lay in the bottom of the tray, line the tray with the sugar first then the rice then spread the wood chips or tea bag contents over the top, then put on the stove, heat on a high heat till the sugar bubbles and starts to burn place the meat or fish fillets on the rack and place into the tray but make sure the meat is above the burning sugar and not touching, once it's smoking place the lid on securely and turn the heat right down, a duck or chicken breast will take about 15-20 mins or trout fillet for example would only take about 5mins,
