3 kilograms of carrots from ALDI, costing £1.20: Two great big bags!*
Diced up to fill two big saucepans: Steam blanched in batches...
Then dehydrated 24 hours and what have we got?
About 3/4 of a pint of golden magic.
Anyways... as promised, the before and after photo.
*ALDI have a great deal on family size bags of wonky bell peppers. £1.25 for 6 Peppers.

i cheat and use the 1kg bags of frozen diced veg, straight in the drier and off to the jars.

Googling reveals that they are just 2nd grade, perfectly edible carrots that didn't reach supermarket spec.... Busy week ahead.
A question about dehydrating onions: Mine went a little brown: Should i have blanched or pretreated them?

I blanch the onions Jenny, not had any problems. Good drills on the carrots too.

Blanching onions does help although they'll be fine to eat. Blanching does cut down the smell a bit though so that's the main reason I do it.

I finally opened up a jam jar sized kilner jar of home dried onions today, I'm putting them in with some lentils to cook. I absolutely didn't blanch them (never blanched a thing in my life). Am I going to poison myself when I eat them? I don't care about them being a bit brown (I'd describe them as cream, personally ). Since they're soaking right now, fast answers appreciated

From what I can gather, ...
Non-citrus fruits like apples, pears and bananas will go brown unless dipped in lemon juice before drying.
Carrots will go black if not peeled and not blanched beforehand. (Except if bought frozen)
Onions will stink less if blanched.
Mushrooms just go straight to dryer.
I don't yet know about peppers or tomatoes, but I haven't blanched mine.
But it's almost all about discolouration.
Botulism is the major poisoning risk from jarring and seems most likely in wet jarring.
Fungal decay might take place in foods that were still damp when jarred.

Thanks Jenny! That's good to know - I just sliced and lay it on the shelves. If I don't come back by the end of tomorrow, I left them too wet and I've poisoned myself

Jenny, I find blanching mushrooms helps, I put them on a plate, sprinkle some water on them then put a bowl over the top, a minute in the microwave then on the dryer. I destalk them and do them separately, apparently the go a bit 'woody', I grind them in a coffee grinder to add to soup etc.

Only ate the lentils and dehydrated onions mix a little while ago, but I'm not dead yet great texture of the onions, really liked it. Such a great way to store food!
