Easy kidney bean curry

My wife is semi- vegetarian these days,so food reflects that.We fancied a curry the other day,and dropped on this one:

We use the tubes of minced garlic,and frozen ginger,which means we always have them in.Oh yes,and chopped coriander in the freezer too.

I'm a huge fan of one-pot cookery, but I get stuck on flavour combinations, for food and the sauce, which is why I fall back on pesto too often. These are great, thanks both :)

Great minds! Chilli non carne for us last night with couscous. Tinned onions/red beans/tomatoes/potatoes, frozen allotment garlic/chillis/peppers, shop-bought sunflower oil/couscous. Took 15 minutes to prepare/cook. Two pots I'm afraid - one for the chilli and one for the couscous.
