Jar food
Is there any unique problems you have to consider with food thats kept in glass jars,(ie pasta/curry sauces) as opposed to being stored in tins? how long is jar foods safe for after its use by date etc. any info would be great thanks

Jars are ok for short term storage with a good seal i use jars mainly for pickled goods beetroot cabbage eggs stuff like that .
Really if you want to store rice pasta curry power you want to go down the mylar bag road with oxygen absorbers.

jars are the original cans , the main problem with jars is light food discolours more and looks less appetizing im not sure if it lasts as long as cans but i cant see why not if its kept air tight

I dont take any notice of the dates on canned or jar food. Use your eyes and nose.
Americans can in jars and they last for years as long as the seal last then so will the food.

Most jars have a 'popper' in the top (much better then the old way of checking the seal)

With my clip top jars I include 2 oxy absorbers for pasta, rice and noodles, one at the bottom and one on the top. All my food is stored in a dark cupboard, which is also the coolest room we have.
Getting into the ring/disc type jars now too and have a couple filled with flour and oxy absorber on the top and they have popped down tight.

I use my vacuum sealer to seal jars with dry goods in them. but will get some oxy things in case power goes out and I have to open them and only use a tiny bit from the jar.

Flour may block up your machine so be careful! I have a lower slower suction setting on my machine to cope with those. But I dont vacuum loose flour. I vacuum it in the bags it comes in.
When I say dry I mean my dehydrated foods rather than bought dry goods.
But yes have to be very careful not to mess your machine up.

You know you are a prepper when you have 200 jars filled with tomato pasta sauce. Just make some fresh pasta, add courgette, peppers, carrot, mushroom and serve over nice baked potato. You wouldn't even know it was doomsday NOM NOM NOM.
