This is my go to gear its basic and designed as an all round support not specialist just enough.
I keep revising different scenarios do if you could throw some input I'd appreciate it.
Bag: NI day sack ( best I've found but unfortunately it's DPM
USB - with comprehensive documents - it's a COMSEC type from army days and encrypted

First aid kit - not store bought, created myself

Hexi cooker with solid fuel
Small mess tin with lid (food and brew kit inside)

Maybe think of adding some toilet paper, water, lighter, zipties, hand sanitizer or small soap, chewing gum, may be a spare battery for torch, pen and paper, a couple of glow sticks.

Great set of gear but defiantly alot of INCH items rather then immediate/short term equipment.
I know you have included ways of gathering food but add some prepackaged for at least 48hrs, you may be moving or setting up camp or in an urban area away from potential sources.
Plus think 2ltrs at absolute minimum of water as well for travelling to site and initial requirements. Yes you could purify on route but that's a unnecessary initial requirement IMHV.
Tarp, one man tent, sheeting for shelter. Many very low weight waterproof options, i know you can use branches and create from the simple to log cabin but always like a small/medium tarp to keep myself and my gear dry, even if you upgrade. Assuming from the list you intend to buy out to the country rather then urban areas.

Inch items are worth more it's a general bag and General covers as much as possible.
A tent is a waste as a one man bivi, when I already have one. And kit stays with you in your sleep bag, at least the important stuff. And waterproofing is key, font need to keep a bag dry just the contents.
Prepackaged food is a waste. If it's a true TEOTWAWKI then food can be taken or hunted/fished
Besides 3 weeks without food is limit and food wastes water.
Purify water temporary is my way - 2litres is my temporary store it will last a day in British weather. And in the heat you ration sweat not water. You need to remember 1l = 1kg - most on
Here couldn't carry enough water for more than 3days let alone all their electronic rubbish as well
Skills equal 100x what kit does.

I'm not entirely certain what you're prepping for but maybe find some space for these items:
Pencils
Metal pencil sharpener
Small writing pad
Wind up radio receiver
Maybe some form of tranceiver
And as others have said, I would pack a tarp.
