I'm building up the stocks before flu season hits - got one of my last deliveries arriving today, then I'm more or less set until April, for everything except tinned potatoes (which take up an awful lot of space!) and fresh and frozen veg. Peas, I'll soak dried ones, but others, like brassicas etc, I'm going to use them to experiment with dehydration, finally. First experiment will be with frozen fruit, there was a lot on offer this week.
+1 on the fermentation. Don't dehydrate bassicas - ferment them! Look up some kim chi recipes and experiment. It is falling-off-a-log simple, healthy, preserves vitamins and trace elements, and has been used as a preserving method for a couple of thousand years.
Mmmmm. Might make a new batch this weekend, it's been a while.
How about dehydrating sliced new potatoes?
