Keep it dried. Cook it when you need it. Like we always have done.

Absolutely Jansman, rice is something you don't mess with, its not worth the risk and you can buy the flavoured rice already prepared and dried for you in packets. I hate them  but I love the pouches for quickness, especially the ones with quinoa mixed in.

Referring to the 50/50 hospital or death scenario, I'm afraid the Foodsafety.gov computer says no

Sources A variety of foods, particularly rice and leftovers, as well as sauces, soups, and other prepared foods that have sat out too long at room temperature.
Incubation Period

Diarrheal: 6-15 hours
Emetic (vomiting): 30 minutes to 6 hours

Symptoms

Diarrheal: Watery diarrhea and abdominal cramps
Emetic (vomiting): Nausea and vomiting

Duration of Illness 24 hours
What Do I Do? Drink plenty of fluids and get rest. If you cannot drink enough fluids to prevent dehydration, call your doctor.
How Can I Prevent Illness?

If food is to be stored longer than two hours, keep hot foods hot (over 140°F) and cold foods cold (40°F or under).
Store cooked food in a wide, shallow container and refrigerate as soon as possible.

Not that expelling liquids from both ends is ever pleasurable

Obviously the Environmental Health Officer who taught me this when I took my HACCP and advanced food safety training got his facts wrong ! I will continue to go with his advice though, as I have never been taken ill nor caused illness to others.

Interesting. I guess that, as with several other food poisoning bugs the severity of the illness from individual to individual depends on a lot of other factors. General health, amount of contaminated food consumed etc. I must admit that over the years I've eaten some pretty revolting stuff and I still eat my sandwiches on the allotment with soil contaminated hands... Never had the slightest problem, nor from consuming mud, earthworms and god knows what else as a child. It's probably that which gave me the excellent immune system I possess today ;)
