Survival Kitchen

Post by diamond lil »

Ok. Wotif there are no shops, for wotever reason. No markets no shops no nothing . You have your stores and you have a good productive kitchen garden. It's early summer. You have 4 adults to feed. You have a rabbit hanging in the shed and you manage to catch a couple of nice fat trout. Make a nice 2/3 course meal using what you have to hand in your garden & stores ;)

oooh, a challenge!!

I would get the BBQ lit, and cook the trout in tinfoil 'cus I've got that in my stores. I would pull up some new potatoes and roast them first in the BBQ. I would make a salad using a mix of salad leaves, chives, spring onions, tomatoes, cucumber, grated carrot, and add some pickled beetroot from my perserves store. I would grill some sweetcorn, freshly picked.

For desert I would have some stewed apple (defrosted from the freezer) served with a choice of custard, or evap milk (in the stores).

I would leave the rabbit for the next day 'cus you might not catch anything the next day!

Is that the sort of thing you were after Lil?

well mine will be pretty similar to Su's I'm afraid. Firstly I'd take the wabbit and carrot, onion, herbs and get a stew on the fire. this is actually tomorrow's dinner but stew tastes better the next day and if we're going to have the barby on we might as well use the waste heat for stewing.

At this time of year the lettuce hedge will be mad so a nice salad with mixed sprouts (mostly alfalfa but also mustard & broccoli) will be nice. I'd get some butter beans and potatoes on the boil and then mash them with some pesto (really tasty in mash and adds some more fat). I'd also warm up a can of veg. Finally just bbq the fish nice and simple.

For pud just some warm fruit (or icecream if the freezer hasn't melted yet) with some dulce de leche. (a sweet sticky caramel like sauce made by slowly simmering a pan of water with a pierced tin of condensed milk in. The milk slowly turns dark and becomes really sweet. it's brilliant on ice cream) which would have gone on with the stew to use up spare heat. enjoy!

that's the way I do it. it's really a winter dish as it does take a long time so it's good to do when you're going to have the Aga/stove on anyway, but I love it on ice cream

BBQ the trout and serve it with a homemade salsa (tomatoes, spring onions, olive oil, lime juice and a few finely chopped red chillies), new potatoes sauted with sliced garlic and butter and a rocket and watercress salad. Nice bottle of chilled Sauvignon to wash it down with.

The rabbit I'd trade with a neighbour for some chicken breasts...
