Hi ForgeCorvus... and NickD. The trick with TVP is to concentrate on the sauce - if you cook it in the same way as you would a meat mince i.e fry and cook first, you will end up with a mushy texture,as it doesnt really require much cooking. If you re hydrate it in a stock (vegetable if you are veggie, but meat stock if not) you will get a better flavour. Quorn is far superior as a substitute but if you are looking at long term storage or a power outage situation TVP is ok - herbs and garlic and plenty of seasoning help massively as does smoked paprika - kinda gives a barbeque type flavour.ForgeCorvus wrote:NickD : Let me know if you manage to make it edible

'tis the season to be boating. Got the wee boat ready for any emergency, got the fuel mixed and stored away. The camping gear is packed up in the boat and outboard is serviced. The Yacht is just about to go back in the water, been doing the antifoul on the hull and replacing some of the ropes. Plenty of freeze dried food packed away. Not too sure what to expect next Thursday with the referendum but if the vote goes the wrong way I foresee riots in the streets.

But on the subject of TVP. I am really enjoying it and have made some dishes that re almost indistinguishable from a meat dish. The secret seems to be to use coconut oil, salt and some tomato puree. Thus providing sweetness, fats and salts the three pleasure chemicals that are present in both meat and some varieties of cooked commercial popcorn.
Also the addition of sauces such as liquid smoke (from Amazon), barbeque sauce, vegetable bouillon stock to the rehydration mixture pretty much does it.
Once its re-hydrated, add home made oat flour (porridge oats in a dry blender jug) and mix it up to make something that physically can be needed and shaped like mince meat and you have a burger mixture. You can then shove that on the George foreman and you are sorted.
There are different grades too and they can all add different appearances to the dish that you make. Its quite fun and only 1.99 at H+B for 1/3 Kg
