We picked up a smallish Petromax Dutch oven last summer and managed to make a soda bread in it using an open fire with charcoal underneath and more heaped on the lid. It took 30 mins to cook. The key takeaway from the 'speriment was that the charcoal underneath needed to be a bit cooler or the pan raised up rather than resting on the charcoal as it did scorch on the bottom.
So SHTF bread is definitely possible with a Dutch oven or something able to do the same job.
