unless of course you replace the minerals and salts you have removed
chances are a diaretic powder would do the job as thats meant to be added to boiled water to aid recovery during severe stomach upset, obviously in much lower doses though
tbh though there must be a solution as many military/scientific bases are sealed and have/use recycled water the space station and the astute nuclear subs being a couple that spring to mind that have fully enclosed systems

UV kills bugs but doesn't remove pollutants like complex hydrocarbons or heavy metals.
