Well, I use onions in pretty much every main meal I cook. I mean, can you imagine a bolognese, a stew, a bourgignon or a curry without onions?

Yet, where can you buy preserved onions? Please post links here if you have a source. Meanwhile, I just tried out pickled onions in a Napolitana sauce for pasta. The recipe is quite simple - onions, garlic, oil, and tinned tomatoes combined and cooked as you would expect. And it worked!

The pickled onions were in the asda value range, at 30p/440g. I'm only telling you guys because I trust you. If everyone went out and bought pickled onions, the price would go up sharpish.

Oh yes, and you get the vinegar they were pickled in for free!

Other than scallions I'm not a fan of onions. I'd just cut a few large chunks so they'd be easy to remove before eating. My solution:

Surely you can normally get dried onions in small packs in the supermarket?

Tesco's, Morrison's and I am sure most other large retailers, sell onion granules in the dried herbs section.

Dried onions might be a reasonable solution, if you can rehydrate them to something like their original taste and texture. I'll look into that, and let you know how I get on. Onion powder or granules doesn't quite satisfy the chef gourmand in me, though. I mean, if we are prepping for TEOTW, let's at least go out with well satisfied palates. Even the condemned are entitled to a decent last supper!

I've got a cupboard full of Whitworths dried onions. They are better than nothing. I wonder who you go about growing them when you have no sets?

Thanks Lil I was just going to go out and look for dried onions so that is handy. You can get frozen onions in Asda's and Sainsbury which are good and as long as you have electric but I wanted a back up.
You can grow onions from seeds you will have to find a verity that is prone to bolting so that you can collect the seed, but they are quite easy to grow.

Dried Onions have the same texture as well sweated fresh ones.....I think they're a bit short in the flavor department so use half as much again to twice as much as I would fresh

In short: Better then no onions, not as good as proper ones

Whitworths are commonly available, but I have seen them some places in bulk quantities (and at catering prices)..... I'll see if I've got a link


Does anyone know if you can pickle onions in brine ?

There is a place on Amazon that sells bulk dried veg, think was £20-odd bags but I lost the link, maybe search for it.
