Elderberry wine

I had a busy weekend just bottled 25 bottles of elderberry wine, looking forward to a sampling session when it's ready, problem is its 6 month minimum until its ready but well worth the wait :D

If your into home brew look into the book First steps in armature wine making by a chap named CJ Berry IIRC. I will find a link and ISBN number when I get home and double check the name

Got the book. Use it all the time.

I do his rice and raisin wine, recipe, mostly, because it's drinkable after only 21 days and can be made out store cupboard ingredients. I have 7 gallons fermenting as we speak.

I love elderberry wine, though. Makes a good clarety sort of red.

Also recommended is the easy recipe in there for blackberry wine. I used a white wine yeast this year, because it was all I had. Still good, but next year I'll use the burgundy yeast for a better result. Either way, if you pick your own blackberries and make a gallon or so, it comes out at around 60p a bottle. I think that's the cost price every wine should be based on!
