Bread

Post by jansman »

At zombie o'clock this morning I made me sen a bacon sarnie ,before I tootled off to the slaughter house for a shift ( back in that game again).I got thinking about BREAD.Or substitute for bread. We have a damn good pantry, but apart from cream crackers, we have nothing stored in that line.We have flour and pizza base mix ( pizza ain't my thing though,so don't get the wrong idea! It is a food from Hades)

So what do you folks store in that line?

Remember the Swiss emergency plan? From that list I discovered zweiback. You can get the Dutch version in B&M and Home Bargains. I've taken quite a liking to it and store a few packets. It's like crispy toast. You can also get a Swedish version called Krisprolls which are multi grain and good with soup. I found those in poundland.

Strong bread flour frozen for week to kill bugses, then vac packed, not nearly enough but some, same goes for standard flour, self raising, and cornmeal, I'm freezing and vac sealing things like quinoa and bulgar wheat too, mentioned in a thread a while back I stored some ready mix bread machine stuff too long and suffered an infestation, wont get fooled again!
I like that Crispbake toast stuff too brambles :D but I don't store a lot .... because I tend to snack on it  I hide it from myself, I experiment with Bannock a fair bit and have made myself a cardboard (tinfoil covered) roll up oven for bread making experiments which would work with any number of portable cooking systems.

Recently I've been experimenting with pancakes ( flatbread would work too) spread a layer of stuff on them, roll them up and tuck in, the non diabetic ones have strawberry sauce although jam may be a better option, for savoury we have had tinned hot dogs and tinned curry/chilly on them or dare I say MARMITE  that Tesco pulled pork would work too I'd wager.
I have a strategy, it's not written in stone, nor can it be, this scenario has too many variables, everything about it depends on those variables, being specific is not possible.

Gram Flour to make Gram Flour Crepes. They can be cut up into croutons for your soups and used as burrito wraps instead of bread for sandwiches. Either use a high speed blender to make the batter or soak the batter overnight to make sure the chickpeas (that make up the gram flour) soaks up the water and therefore gets prepared to be put on the crepe maker pan or frying pan. Make them THIN.

All of those ideas are great. My dear Wife says that flat bread is no problem with what we have.
Plymtom. You mention quinoa.I have been growing this for a few years, and using it as a rice substitute.Looks like it could have another use.
nickdutch, the garam flour crêpes sound good.Apparently, we have said flour! My Wife uses this to make chapatis every now and again.I thought she bought them in!

It would seem we are not as ' Breadless' as first thought.

Anyhow,I have researched hardtack. Any of you done that?

Yeah I have had a go, just the one, man they are *&&%ing hard I baked them then bunged them in the dehydrator for good measure, then vac packed them, saved a few to attempt to eat  you really need to let them soften or you'll need the dentist, about the same time a few months back when I made some pemmican, I think I may have a taste of it now, one batch of the hard tack I had to vac pack twice- the power of the vacuum sealer snapped a couple of them which in turn caused the sharp edge to break the bag

Hardtack were also known as 'Sheet iron' and 'Tooth Breakers' by the poor souls who had to live on them.

I currently have six recipes all on one document, anyone want a copy?

I'm hoping to find some Pilot Bread some time that is at something like a reasonable price

Ditto please ( I didn't even think there could be six variations of such a simple recipe).
