As a 40+ year butcher ,my knives have to be tough and even better…cheap! So in the yard I use Mora. Does the job. Hultafors is another, and cheaper too. Both brands do the job.
In three words I can sum up everything I have learned about life: It goes on.

Thanks jans yes i like mora i have a few fixed blade , it is trying to find a couple of nice folding that we can keep in our bags , it is so hard these days because some of the lesser known do make a fair blade .

I remember the butcher in our local village as a kid when we use to help out he would always show us how to keep a keen edge on the blades , he always said don't fear a knife that is razor sharp fear a blunt blade it will do you more damage , i found that out when as kids building camps i had a bowie knife that well was well used and not sharp shall i say it slipped i was lucky but like he told us a blunt knife will mean you push harder meaning your more liable to slip .

I have not tried hultafors but i will give them a look thanks

I just have Swiss army ones, but you need two hands to open them. Same with my Leatherman, which you can't carry in public unless you are a tradesperson going to work. I know the government list bans anything that opens automatically. Also have a Mora.

Yes i have some of the older style lock knives you need 2 hands to owrk them i am looking at the single hand opening so say your holding a rope you tied off you can get the knife out of pouch or bag and flick it one with the thumb it locks you know the type , it is just trying to find one that people have used , there are just to many to choose from these days

A lot of friends like Spyderco, the Honeybee, Bug (shown below)and Grasshopper are all short enough slipjoints to be free carry. There are also several small locking folders in the sub £50 price range.

I prefer Opinel, but those aren't one-handed

Thanks all , it is a minefield hence why asking , i have watched a few reviews and still could not make my mind up , i am sure we will end up with a couple of different ones , it is a bit like when we got in to shooting got the licence then was liek a kid in acandy shop when looking , we have a few good quality knives but i want a couple of easy to flick open one handed mainly i think they will get used in the garden but can also then go in our away day bags , it is so hard when stringing up in the garden and so on that i end up letting go the fruit drops down then get a knife and so on by which time i have cursed so much lol .

I might find a nice one and let the wife buy mine for chrsitmas as she keeps moaning i have not got anything lol

Thanks again all as i say so great to be able to ask and get such great help

One-hand opening knives. I have Spyderco Delica for over 20 years now. It is convenient to carry, but only with a purpose, it is illegal without a good reason because it locks. I also have large Sebenza for 7 years now. I now find that narrow, short and thin blades are usually more convenient, so thinking to buy myself Mnandi (though perhaps it won't be convenient). The knives I own have too wide blades
My ideal one-hand opening knife does not exist
There are long blade SAKs that can be opened one-handed
I am thinking of buying Victorinox XT Hunter because it can be useful to skinning deer carcass
