This isn't the cheapest recipe but its so easy and very healthy.
I used a large 11 L pressure cooker to make it fast so it didn't use much energy.
Chopped small - 3 onions, 6 medium carrots, half a celary, 4 small beetroots, 6 cloves garlic (all organic) (£2.50)
500g minced organic beef (£3)
Brown the beef off in the pan then chuck in the veg.
Add 3 tins of chopped tomatoes. (£1)
2 tins of kidney beans. (£1)
Add a little water - maybe half a tin.
Chuck in some Salt, Pepper, dried chillis, Thyme, Basil and Oregano (from the garden) (20p)
1 beef Oxo (I don't use much as it has MSG in it)
Stick the lid on and pressure cook on high pressure for about 10 minutes.
Allow pressure to fall and add tomato puree, some pesto and sprinkle with some brown flour to thicken and flavour.
It makes about 10 portions ready for canning or freezing. Total cost £7.70 or 77p per portion plus rice or pasta. Lets say a quid for a delicious healthy organic meal.
I had it for tea tonight and had to stop myself having 2 helpings! (I'm trying to lose a few pounds)
To make it cheaper -
Use cheap beef, corned beef or none at all - try more beans and quinoa instead to make it veggie.
Grown your own root veg and herbs.
Use dried bulk beans - soak the day before.
Make twice as much - there was planty of room in the pot if you have the space / containers to store it.
Chilli-con-carne with spaghetti
Re: Chilli-con-carne with spaghetti
That sounds delish. I've never eaten chilli with spaghetti before! Could you use beef boullion rather than OXO - maybe it contains less MSG?
I think 77p is cheap as chips for a hearty meal!

Yeah boullion would work fine you don't even need the OXO - just add a little more salt instead if you don't want the 'chemicals'.
