You will need:
270g Unsalted butter
270g Self raising flour
270g Caster sugar
4 Eggs
4 Lemons
Confectioners sugar + the juice from the above lemons.
1. Mix the sugar and butter together .
2. Add two spoonfuls of flour and mix again
3. Add two eggs and mix
4. Add 4 spoonfuls of flour and mix.
5. Add the remaining eggs
6. Add the remaining flour a little at a time.
7. Add the zest from the four lemons
8. Bake in the oven at gas mark 4/5 for around 40 minutes. When down put it on a rack too cool.
9. Mix the Lemon juice from the four lemons with confectioners sugar, adding suger until its drips of the spoon.
10. Coat the cool cake with three layers of the lemon/sugar mix.
11. Eat.
