French Stick

This makes a really nice french stick which is great with home made sausages and for sandwiches.

You will need:
3tsp of yeast
375mil of warm water
575g strong white flour
1tsp salt

Put the yeast in the warm water and mix together.

Put the flour and salt in the bowl and mix with a knife

Pour the water yeast mix in with the flour and mix with the knife.

Flour a work surface and empty the bowl onto it (I tend to use wholemeal flour to add a little goodness but its not needed).

Kneed for 10 minutes

Place back in the bawl for an hour and half (covered)

Knock the air out of it and leave for 45 minutes (recover)

Knock the air out of it again and leave to for another 45 minutes (recover)

Split the dough in two and shape so their about 13 inches in length.

Leave for 50 minutes (uncovered)

Bake at gas mark 7 for 20-25 minutes, it will sound hollow when tapped.

This bread lasts about 3 days before becoming rock solid.

If you store this in a plastic bag it will last even longer and then when stale is perfect for making French stick pizza!
