About this time last year I planted a plum tree against the back of the shed, now I come to think of it I’d much rather it be growing up the fence.
So should I get right on and do it, or wait until the winter properly arrives?

Wait until the tree has lost it's leaves and it should be fine.

Without most of its leafs is better but be before the frost. We had frost at groundlevel last night here. If we had to plant or move a tree, I'd do it today in the sunshine.
Depending on where you are, you'll know when winter usually begins. Plant well before then.
