Anybody got a good recipe for nettle soup ?

I'm told this is tasty but I've yet to try it.
Has got to be new growth of nettles though so may give it a go in the next few weeks.

Fry up some chopped onion in butter/ good oil.

throw on a few handfuls of young, green, top leaves
add some chopped leek (or new potatoes)

cook for a few minutes then add veg stock (or chicken) and simmer for 20 mins

to add a little spice stir in some whole grain mustard at the end.

Ok ta, think that's the same recipe I have. I need to try it because so many people say its good. Chock full of iron eh?

Tastes very similar to Spinach. I usually make nettle ale with those that grown in our garden.

Okay,having lots of nettles in my garden, ,I tried nettle tea and soup last year.I washed them to get any bugs off and added them to a chicken and potaote soup I had made.They do indeed taste like spinach but it felt weird eating things I had previously considered as weeds.The nettle tea,looked disgusting(like a green pool of stagnant pond water :lol: )and I didn't want to drink it but understanding it was good for joint pains I drank it and it tasted of tea!

Really, thats good. If it was too weedy tasting then you could add it to ordinary tea and drink without milk. Thats how I do mint tea. I think we could change how we regard nettles and view them as food, even if just occasional food. Personally I'd eat anything if it tasted ok, just shove it in soup .

Nettle wine is absolutely wonderful, I gave a few bottles to Brigit Strawbridge a few years ago, and for someone who is teetotal she really enjoyed it, ruined 30 years of avoiding alcohol though :roll:

A couple of glasses and she was glowing :lol:
